Lemon Thyme is a very useful herb, which can be used to provide a lemon flavour to a roast chicken, add to a herb crumb for fish, use in Italian dishes, as a marinade or in dressings. Thyme also has antiseptic properties. It is a compact, rounded bushy shrub with small mid green, strongly lemon scented leaves and pale lavender-pink flowers in summer.
